It's been a while! I've got cheap meals for you!

End of the month have you feeling broke and bummed!?


When it comes down to the end of the month, my husband and I like to "live poor" and it's a great way to make use of items that we already have on hand rather than spending extra money at the grocery store. So I go through the fridge, freezer and pantry and see what I can scrounge up for the week. And in this post I'm going to share with you some CHEAP meals that you can make that will be crowd pleasers and will help you to forget how light your wallet is feeling before payday. ;)

Last night, using a rotisserie chicken ($5.50 at the grocery store), a box of pasta salad ($1.19), a box of lasagna noodles ($1.29), a jar of spaghetti sauce ($1.79), a can of coconut milk ($1.29), green curry paste ($3.29 but is good for 3-4 uses), a bag of frozen peas (Kroger carries frozen veggies 10/$10 so $1), a bag of frozen carrots ($1), a bag of frozen broccoli ($1), a bag of frozen bell pepper and onions ($1 at Dollar Tree), a cucumber (.50), 1-2 lb of ground beef ($4), a bag of black beans ($1), an onion (.25), a bag of white rice ($2), 3 potatoes ($3) some fresh or frozen spinach($2) if you want, ricotta cheese ($3), shredded cheese ($2), a few slices of bread and some mayonaise we had everything together for a few meals (and still have some pork chops and tenderloin thawing out in the fridge for meals later in the week)!
Grand total: $36.10 and this will make 4 meals for 5 people each so that breaks down to $1.81 per person, per meal!

So now i'll share what I made out of all of that!
1. Green curry with chicken, vegetables, served over steamed white rice.
2. Chicken salad sandwiches with pasta salad
3. A big pan of lasagna with spinach inside or sauteed and served on the side
4. Black bean burgers with homemade french fries

Green Curry with Chicken

First take all of the meat off of the bones of the chicken (you can save the bones and make chicken soup with it at the end of the week if you'd like to throw in yet one more cheap meal!), then set half of your chicken aside for your curry and half aside for your chicken salad. 
In a pot on the stove, pour in your can of coconut milk, heat over medium heat and then add in 2 tbsp of the green curry paste, your chicken and let simmer for a few minutes. Stir and add in your frozen veggies. (broccoli, carrots, peas and onion/bell pepper mix) I typically use about 1/3-1/2 of each bag so you'll have veggies left over if you decide to make that chicken soup!
Meanwhile I have added 1.5 cups of white rice and 3 cups of water to my rice cooker and have it cooking itself while this is on the stove
Let it all simmer till your rice is done cooking and then serve!

Chicken Salad Sandwiches and pasta salad

Using the other half of your chicken, cut your chicken into smaller pieces or shred it and place in a chopper or blender (or you could leave it shredded if you prefer it not to be so minced). Then add in your mayonnaise and if you bought frozen spinach you could throw some in. I used fresh spinach on my sandwich instead and just lined my bread with it. 
Cook your pasta salad according to the box instructions and add in diced cucumber, frozen peas, frozen carrots and olives if you have some on hand!

Lasagna

I'm sure you know how to make this but for the sake of it, I brown my ground beef in a pan with some italian seasoning, 1/2 diced onion and some garlic if I have it on hand. Then I combine that with my ricotta cheese, I chop up some fresh spinach and add that and then add in one egg and combine the mixture. Put some spaghetti sauce in the bottom of your pan, line with lasagna noodles, spread your mixture put some sauce on top of the mixture and then repeat. Top your final layer of sauce with shredded cheese, cover with foil and bake at 350 for 45 min.  (If you didn't put spinach inside of your lasagna, sauté some on the side to serve as a side dish!)

Black bean burgers

I follow Melissa D'Arabian's black bean recipe first minus the scallions: 
Ingredients
1/2 pound dried black beans
1 medium onion, roughly chopped
3 fresh garlic cloves, pressed
1/2 teaspoon dried oregano leaves
1/2 teaspoon ground cumin
Pinch red pepper flakes
2 teaspoons sugar
2 tablespoons white wine vinegar
Salt and freshly ground black pepper
Chopped scallions, for garnish
Directions
The night before, soak the black beans in a large pot of water. The next day, rinse the beans, cover with 3 cups of fresh water and bring to a boil over high heat. Reduce the heat and simmer covered for 30 minutes, skimming off any foam. Stir in the onion and simmer 30 minutes more. Add the garlic, oregano, cumin, and red pepper flakes, and simmer uncovered for 30 minutes, stirring occasionally. Stir in sugar and vinegar, and taste before seasoning with salt and pepper. Turn out into a large serving bowl and garnish with chopped scallions

Then I drain my black beans and put my black beans, the other half of my pepper/onion frozen mix, 1 egg and 3/4 cup bread crumbs (alternatively you can used crushed saltine crackers or if you want to use sliced bread, toast it in the oven on a cookie sheet and then crumble it into crumbs) 
 Form it into patties, place on a foil lined cookie sheet and bake for 10 min on each side @ 375 degrees. 
While those are baking, wash and slice up your potatoes and fry them up in a pan with some veggie oil. As soon as you pull them out of the oil, place on a paper towel lined place and lightly salt and pepper them. 
Serve your black bean patties on bread (in our case we had some buns frozen and left over from a bar-b-que we had previously and I added some fresh spinach and mayo to mine, Wes added fresh spinach, avocado and dijon mustard to his. :)

And voila! You have 4 meals, sure to please your family!

Couponing!

So I'll admit, I've dabbled with couponing and am starting to get more involved with it. But don't expect to see me on an episode of "Extreme Couponing" or "Hoarders" for that matter, any time soon.

While the idea of saving money is obviously something that I'm drawn to, I just can't see the point in clipping coupons in order to get 20 bars of soap for free. So I've decided that while I'll clip all the coupons I find and do my best to put them to use, anything that I don't absolutely need will be donated.

Before Wes and I endeavored upon starting our new budget, (which follows many of Dave Ramsey's principles) our grocery budget was....non-existent. We pretty much just spent however much we wanted to on food, but soon realized that our average monthly grocery bill was a staggering $350. I was APPALLED! So I made it my personal goal to knock that number down to just $200 a month, and though it's been a bit difficult (month before last we had a big cookout at the house and just 2 weeks ago I had a baby shower at my house), we've managed to stay on track.
It does get to be quite funny come the end of the month however when we are close to being out of grocery money and start to "eat poor" as we like to say. Though this doesn't consist of just rice and beans or anything like that, by the 25th of the month, I'm certainly not making Chicken Cordon Bleu, that's for sure.

With all that being said I feel like we're doing tremendously better than we had been, but I know we can do even better than that! That's where couponing comes in. Is it a little time consuming, yes, to begin with. But once you get yourself started, you'll realize it's quite easy to maintain!

Every Sunday, I purchase two newspapers, from Dollar Tree, NOT the grocery store or convenience stores. Our Sunday paper is regularly $2.50 here in Norfolk, however Dollar Tree sells it for a cool $1.05. Check your local Dollar Tree and see if they offer a discount on your paper as well.
I clip all the coupons from the inserts and go through all of the weekly store ads to search for deals and circle the ones that I want to look into.
Then I visit all of the stores' websites to print more coupons and see if they have any info about upcoming Double Coupon Promotion days. (Farm Fresh doubles coupons every day up to .99 and on Wednesdays up to $1.00, but what I'm looking for is when they offer Double Coupons up to $2.00. THOSE are the money making days.) K-Mart also offers Double Coupon days regularly, almost once a month.
After that, I visit Coupons.com and websites of the major brands such as Kelloggs, P&G, Crest, Suave, General Mills, etc just to see if there are any additional coupons that I've missed. Also check brands' facebook pages! It's another great resource to getting deals and/or freebies!
And finally after I've printed and clipped all the coupons that I want to, I input them into my coupon master spreadsheet. This is how I keep track of the coupons I have, their value and expirations. That way, when I'm in the store, it's quite easy to spot something on sale and say "I've got one for that!".

If anyone would like me to send them a copy of my blank master spreadsheet to help them get started, I'm more than happy to do so.

So for this week, so far I've taken advantage of a few good deals that I'd like to share. (Obviously I'm not sure if these are nationwide, but are at least in the Virginia area. Check your local ads to see if they are available in your area) If you didn't get the Sunday paper this past week, ask your neighbors, visit the local stores to see if they have any left, call the newspaper company to see if they have any left (which they may sell to you at a discount rate), ask people at church, or even look on Craigslist under the "Free" section.

Dollar General:
 * Large bags of Cheetos are currently buy 2, get 1 free.(regularly priced $2.95 each) In this Sunday's paper, there was a coupon for $1.00 off 2 bags, so that makes it $4.90 for 3 bags, $1.63 each. And yes you can mix and match for regular, flamin' hot and cheese puffs. :)

 * Palmolive Dish Soap bottles available for $1.00 each. Purchase 2 and there was a coupon this sunday for $1.00 off two bottles. That makes it a cool $.50 each for these dish soaps. :)

Walmart:
 * Wholly Guacamole (prepackaged in the veggie section coolers by the pico de gallo and jarred dressings) is priced at $2.14 per package. You can go onto Wholly Guacamole's facebook page, like them and print 2 coupons, each at a value of $1.50 off. Then you can purchase 2 packages of Wholly Guacamole for a cool .64 each! That's cheaper than 1 avocado here!!

Navy Exchange:
 * Colgate Toothpaste is currently on special, 2 for $3. There was a coupon in the paper offering 1.00 off 2, so that makes these $1.00 each! :)
 * Zest Bodywash is on sale 2 for $4 and there was a coupon for .50 off so that makes them $1.50 each. (Not a huge savings, but still a good deal!)

Farm Fresh:
 * First of all they have TONS of buy one get one deals available this week through the 8th, so definitely check them out!
 * Mission Flour Tortillas is part of the buy 1 get 1 special AND there was a coupon in the paper for $1.00 off 1 package. So you can grab 2 for $1.79, that's just .90 per 10 pack!
 * Lays Potato Chips (any flavor, not baked) are on special, 2 for $5 and the coupon was for 1.00 off two, so that makes them $2.00 per bag. (Not a huge savings, but great if you have a bbq this weekend! But if you are having a bbq and need more chips, check out the Food Lion deal)
 * Hamburger Helper twin packs (where it comes with 2 meals in one box) is currently being offered for $1.79. There was a coupon in the paper for .75 off three. So purchase three and it comes out to $4.62 for 6 MEALS!! That's .77 each!

Food Lion:
 *Lays Potato Chips (any flavor, not baked) are on special, buy 1 get 1 free. SO you purchase 2 at the regularly priced $3.49= $6.98 and use the coupon from the paper that is $1.00 off two, making it $5.98 for 4 bags of chips, $1.50 each!!
* Starbucks new Recharge drinks are $1.49 and there are 2 coupons to get them for free in the paper, so you just pay the tax, a WHOPPING .10. :)

And now for the DOUBLE DEALS!
Okay well I have a TON available for BJ's (it's like a Costco or Sams) but I'm assuming most people may not belong to them so we'll skip it and move onto Target. (I haven't made it to the Target to do the price checking, but these are still some good deals!)

Target:
 * Clairol Natural Instincts hair color, there is a coupon on Target.com available to receive $2.00 off 2 boxes and then in the paper there was a coupon for $5.00 off two boxes, so that is a savings of $9.00 off two boxes!
 * Covergirl products, there is a coupon on Target.com for $1.00 off two products and the newspaper had 2 coupons available, each for $1.00 off one item. So take all three coupons and you get $3.00 off two products! Pick out something less expensive like a small eyeshadow or lip liner to stretch your money further!

There are TONS of other deals available, but those are the ones I've found and am using or have already used this week. Do yourself a favor and invest in couponing. It's a great way to save money on things that you would normally buy anyway.

2 Day Getaway for under $100!

Well we got back from our "Babymoon" in Washington D.C and it was a fantastic trip! We enjoyed the food, the monuments, and most of all, the Cherry Blossoms in full bloom!



But enough about that and on to the good stuff. I'm sure you're wondering how the heck we managed to take a 400-mile roundtrip mini-vacation including gas, food, lodging, parking and activities all for under $100. Don't worry, I'm willing to share! So what all did we accomplish for our budget of $100?

-A concert
-Fresh seafood dinner
-One night stay at a hotel
-Breakfast
-Lunch
-Attractions
-Parking for 2 days in downtown D.C
-Gas
-A bit of shopping

First off:
As I mentioned before, good things take a bit of planning. So if you're looking to save money, making the effort and taking the time to do so will really pay off. For a short trip like this, it took maybe an hour tops of getting everything together and printing out all necessary items. This is one of the biggest pieces of advice that I can offer and you simply can't afford to skip it! So plug in your laptop, hook up the printer, and get out a pen before leaving for a trip.

Our hotel:
Now before you ask, no we didn't sleep in the car, camp in a tent, or stay at a friend's. We legitimately stayed at a 4-star hotel with breakfast included for the price of FREE. That's right; free.
Now here's the secret of how- mystery shopping. I recently started doing consultant work on the side and boy has it paid off. Aside from earning some cash, you can get free meals, gym passes, or even a free night at a hotel. (I've been fortunate to earn all of the above so I highly recommend it)
You can get a position being a mystery shopper (sometimes referred to as a shadow shopper as well) and the best part, aside from the perks that come with it, is the fact that you can dictate your own schedule. I found out about companies in my area from job posting sites like monster.com but found that one of the best ways to get started is to contact a temp agency. You receive a list of available shops, pick the ones you'd like to do, visit the location and submit a report. It's THAT easy.

Our dining:
Well seeing as though our hotel came with breakfast included, that was another perk! As for dinner on Thursday and lunch on Friday we were obviously on our own, so that's where some creative planning came into play.
One of the best trip planning friends you can have is Groupon.com. Groupon.com now also has a subsection called "Deals Now!" and for a last minute trip, this is a must!
I was able to hop on, scan through available dining deals, narrow down the ones that sounded worthwhile and then I checked out the locations via Google Maps and the menus via their websites. $15 for $30 worth of food was more than enough to get us a great dinner at a great seafood restaurant in Georgetown. They also had available deals at chain restaurants like Moe's, a frozen yogurt place, etc. And with "Deals Now!" you have the option of finding great deals for today or tomorrow. So take advantage of it!
So for $33 total(we paid the difference which was just tax), we had Thursday night dinner and Friday lunch covered!

Parking:
Again, planning is an absolute must! Most people don't realize it, but you can pretty much find parking prices for just about any major city or metropolitan area that you could be planning on visiting. I personally like to use CentralParking.com and BestParking.com to find the best rates. The great thing about CentralParking.com is that they allow you to print out a coupon that GUARANTEES your price, regardless of what the posted signs at the garages say when you get there. If you've ever been to DC, I'm sure you're aware that parking can be quite expensive, so this truly saved us! For $9 we were able to park the first night in downtown DC for the 6 hours we were there and for $11, we were able to park all day Friday. The posted amounts would have totaled to $35, so we saved $15 JUST BY PLANNING!

Gas:
With prices rising as summer approaches, it can be difficult to save in this area. For us, our trip to DC and back was going to be about 400 miles total, so there would be no way around having to get gas at some point. But with sites like GasBuddy.com, you can at least look for the cheapest available options. Also if you gas up at any murphyusa (walmart/sams) and you use a Wal-Mart gift card, you get .03 off per gallon. So next time you're at walmart in the checkout line, grab a gift card and put some money on it so it's there when you need it. Also, try to gas up before you leave your city; chances are it's cheaper where you live than the tourist destination you're headed to. Which proved to be ridiculously true as gas prices in DC were as high as $5.39 a gallon. We started with 3/4 of a tank, ended up spending a measly $40 on gas and still have a 1/4 of a tank left over.

Last but not least, Attractions:
One great thing about DC is that there are SO many things to see for FREE! Of course we went and saw the National Monument, the Lincoln Memorial, the White House, the Vietnam Memorial, ect. but there are so many other great things that they offer as well! For instance, the National Zoo is completely free! And online they offer their daily schedule, including when you can do a meet and greet with some of the animals and even help to feed them. Also the Bureau of Engraving and Printing offers free tours where they actually show you how our money is printed!
And for our Thursday night entertainment, we partook in visiting the Kennedy Center for Performing Arts where the Millennium Stage holds free concerts at 6 pm 365 days a year! We we able to attend a concert for two fantastic songwriters/singers and who doesn't love live entertainment!?
For those of you planning on traveling to any other cities, I HIGHLY recommend taking advantage of About.com for free things to do as well as calling up the city's local visitor's center and inquiring about free or cheap attractions. Also, if there is a Theatre in the city you'll be visiting, it's a good idea to drop by before 5 pm to see if they have any last minute ticket deals or even people trying to sell their tickets for half off.

So all in all, here's how it totaled up:
Concert: $0.00
Dinner: $17.00
Hotel: $0.00
Breakfast: $0.00
Attractions: $0.00
Lunch: $16.00
Parking: $20.00 total ($9 and $11)
Gas: $40.00
Grand total: $93.00

Leaving us with $7.00 to spend on the way home at Ikea. :) Which worked out PERFECTLY seeing as though I bought a laundry drying rack for $4.99 and we had 2 hot dogs and 2 sodas for an extra $2.00. (So we went a tad over budget by having to cover the tax on those items, but hey, not bad!) FYI, On Fridays, Ikea offers a $1 special for 1 hot dog and 1 20 oz soda. Now that's a deal!

Ready, Set, Save!



A little about me: I'm a recent blogger, long time saver and finally felt like it was time to share the wealth! My husband and I have recently learned different ways to not only save money but also to make the most of the money you have with just simple ideas. They don't take much time (though some may require planning), but in the long run they'll save you money and headaches!
I plan on updating my blog at least once a week with my money saving tips, recipes, cheap date ideas, budgeting principles and just some fun info.

For my first "trick", I'll show you how to have a short getaway for super cheap! For us, this is a 2 day trip to Washington DC with a hotel stay, lots of activities and great food, all for free or super cheap. (In fact, we're spending $100 or less on food, lodging, activities and gas for the 400 mile roundtrip, combined.) So I'll be posting just how we did it when we get back and hope you'll stay tuned for great tips to come!
